I saw that in Cata they're only haveing one tier of elemental items in matts being introduced (the equivilant of motes or crystalised, but with no primal/eternal equivilant) this is presumably to streamline the inventory slightly, so I was wondering if they're doing the same with greater/lesser essences

There are both Greater Celestial Essence and Lesser Celestial Essence available and used as reagents for various item enchants. This is a long-term consistency in Blizzard's enchanting strategy, and I do not think it is likely to change in Cataclysm.
